Pioneer Recipes: Potato Cakes

This potato cake recipe was brought across the plains by a young woman from Austria more thana hundred years ago. Potato cakes are delicious served hot or coldwith any kind of meat or with a salad.

Ingredients

  • 6 medium potatoes
  • 2 teaspoons salt
  • ½  cup milk
  • 2 eggs
  • 1 cup flour
  • Shortening

Directions

Wash and peel the potatoes. Use a fine grater to grate the potatoes. Combine the grated potatoes with the salt, milk, eggs, and flour. Melt the shortening—just enough to cover the bottom of the skillet—and drop the potato mixture by the spoonful into the hot shortening. Fry the cakes until they are golden on both sides.
