For Breslau the Family History Library has the 1939 Volkszählung (census) which is mostly concerned with the Jewish population there. These are alphabetically arranged and the film numbers can be found at the following link: Jewish census and for other localities in Schlesien, such as Brieg, Breslau, Frankenstein, Glatz, Guhrau, Habelschwerdt, Militsch, Oels, Namslau, Reichenbach, Schweidnitz, Strehlen, Trebnitz and Waldenberg please use this link: Schlesien Jewish Census
There is also a family book of the Breslau Jewish congregation for the year 1791. This is found on film 1573228 item 20.
